I couldn’t find this to buy anywhere but apparently there’s a premixed version of this seasoning in America? I couldn’t find it anywhere in the UK so I had to make it. It wasn’t as bad to make as I thought it would be. This keeps for around 4 weeks and goes excellently on chicken or fish.
Here’s how I made it for my Lemon Butter Chicken.
What you need:
- Handful of black peppercorns
- Zest of 4 lemons
- 1 Tsp Coriander Seeds
- 1 Tsp Garlic Granules
- 1 Tsp Rock Salt
Method:
- Pre-heat your oven to its lowest heat. Ours is 50 C. Prepare a tray by lining it with greaseproof paper.
- Mix the spices and zest all together in a mortar and pestle/spice grinder. If you have neither you could mix it all up in a zip lock bag and hit it with a rolling pin until it’s all crushed up.
- Lay it out on your prepared tray and put in the oven for around 20 minutes. Taking it out halfway to shake it so it all dries evenly.
Done! You now have some lemon pepper seasoning to enjoy! Keep it in an airtight container and store it in your cupboard!
